One of the most elaborate beers we ever brewed. And that alone says a lot. It all started last year. First we brewed a single grain barleywine using an heritage barley from Denmark, cultivated and malted by our friends at Gyrup. The beer rested in port wine barrels for 9 months.
Next we took a portion of The Shape of Brewing, another wine-style ale, and inoculate the same yeast used to mature Sherry Wine, by introducing controlled micro-amounts of oxygen we slowly oxidized the beer, developing ground-breaking aromas and flavors.
Then it came the art of assemblage, the mix between the Heirloom Barleywine, the Oxidized Wine-Style Ale made something unique. To round the edges we picked another favorite barrel, filled with a luscious Spelt Stout, and made a unique combination, set to impress whoever has an opportunity to grab this can.
This can was filled with live yeast to you can expect the flavors to further develop with time.
