Mills Noire
Description
A sister beer to our wild fermented Golden Strong, The Dickens. A top-fermented, very strong black ale sitting between a Belgian Dark Strong and an Imperial Vatted Porter.
Brewed with barley, wheat, brown malt, and dark molasses, then generously hopped for herbal bitterness. Fermented in summer with a fruit-forward ale yeast in our coolship, it warms naturally, creating rich boozy aromatics.
he beer is then racked into oak casks with wild yeast and bacteria to mature over winter, drying and refining the profile while adding layers of aroma.
Finally, it’s dry-hopped with whole-leaf hops and bottle-conditioned for months, released about a year from brew day.
