We aged some of this years Sake Kasu Beer, made by primary fermenting a Saison on Sake Kasu and our mother culture of wild yeasts and microbes for six months, on local victoria plums. The Sake Kasu is the lees from the Sake fermentation provided by the Sparkling Sake brewery in Little Downham.
