Freeze-concentrated cherry mead aged in Heaven Hill bourbon barrels for 10 months.
Stevnsberry CRYO is a no-water melomel taken up a notch, with its fruit portion freeze-concentrated to capture a remarkable depth of cherry character. From there, it spent 10 months resting in a barrel that previously held Heaven Hill bourbon, developing layers of caramel, bourbon and oak while preserving its vibrancy and fresh fruit profile.
The result is a deeply concentrated expression of cherries, honey and barrel. Velvety in texture, with a vibrant cherry acidity balanced by sweet honey and oak. This interplay creates a finish that lingers long after each sip.
It takes around 600 kg of Stevnsbær cherries to fill one barrel of this product!
