Description
Fanal, single variety cherry mead. Late harvested
Late in the 2025 harvest season, I had the opportunity to source cherries that were left to ripen on the trees for nearly a month beyond the usual harvest window, allowing them to reach sugar levels unlike anything I’ve previously encountered in Norwegian Fanal cherries.
These dark flavor bombs takes a natural center stage in the mead, bringing remarkable density and concentration, layered with vibrant acidity and structured tannins. Despite their intensity, they retain a sense of finesse and brightness, after being drenched in wildflower honey.
